Tastes Like Vintage: One Bowl Chocolate Cake 4

This recipe from Allrecipes.com was made recently by myself and my very talented 9 year old chef-in-training niece, Lulu. A classic chocolate cake, not too rich….so incredibly delicious! The frosting recipe is also from Allrecipes.com and very easy.

Ingredients:

  • 2 cups white sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp. vanilla extract
  • 1 cup boiling water

Directions:

  1. Preheat oven to 350. Grease and flour two 9″ round pans (I used 8″, which was fine). *Lulu suggests flouring one pan with cocoa powder, which I thought was genius.
  2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil, and vanilla. Mix for 2 min. on medium speed of mixer. Stir in boiling water last. Batter will be a bit thin. Pour evenly into prepared pans.
  3. Bake 30-35 min. until cake tests done with toothpick. Cool in pans for 10 min., then remove to a wire rack to cool completely.
  4. Frost if desired. (we highly reccommend).

Creamy Chocolate Frosting:

  • 2 3/4 cups confectioner’s sugar
  • 6 TBS. unsweetened cocoa powder
  • 6 TBS. butter
  • 5 TBS. evaporated milk
  • 1 tsp. vanilla extract
  1. In a medium bowl, sift together confectioner’s sugar and cocoa, and set aside.
  2. In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternating with evaporated milk.
  3. Blend in vanilla.
  4. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.

*Note: I did not have evaporated milk, so evaporated my own! Just simmer on stove for a while, til condenses. Worked just fine.

Frost only when cake is completely cooled. Lulu likes to lightly dust with confectioners sugar as the finishing touch.

Serve with a glass of cold milk, of course.
