grandmother would recognize as food. Which is why it’s so hard to explain what happens around Easter, when those of us that crave whole grain this and natural that have a supremely unnatural lust to eat things that are the bright pastel colors of the jelly beans in our Easter baskets.

The Vesties Team has outdone itself this week with Peeps Fest 2013. Hot pink, lemon yellow and sky blue peeps have been turning up in all manner of Vesties listings. Creativity and entirely the right sort of humor has wound up with some stunning product shots, which we’ll be featuring here. 
There is no finer way to celebrate Peeps Fest that with Heavenly Ambrosia in a Cloud, a light as air blend of retro pantry staples that at least I know my grandmother would recognize. Picture this–your spring table with your vintage custard cups or footed sorbet cups overflowing tastefully with a nest of white Cool Whip filled with Ambrosia with a happy little Peep perched on the side. It’s nothing short of spring in a spoon.
Monday morning we can happily go back to our muesli and fresh vegs, this weekend, let’s indulge our more colorful urges. This recipe comes from the Kraft website; if you’re going to do ambrosia, you might as well get the recipe from the mother ship. They suggest making one big ole bucket of Ambrosia in a cloud, but it can certainly be individually portioned for table appeal. Don’t forget to go heavy on the Peeps on top!

Heavenly Ambrosia in a Cloud

1 8 oz. tub of Cool Whip
2 cans, 11 oz. each, mandarin oranges
1 can, 20 oz., crushed pineapple, drained
3 cups miniature marshmallows (try and find the little pastel colored ones!)
2 cups Bakers Angel Flake coconut
Spread the Cool Whip onto the bottom and up the sides of a 2.5 quart bowl.
Fill with the combined other ingredients.
Chill at least 1 hour.
Note: to make classic Ambrosia, mix the Cool Whip in with everything else and spoon into bowls.
