Tastes Like Vintage: Quick Strawberry Trifle 1

My mom clipped this recipe from our local newspaper at least 25 years ago…it’s been a family favorite ever since! Strawberries are abundant in Southern California – we have a wonderful stand just up the street from my home with the biggest and sweetest strawberries you’ll ever taste! This dish is lovely on your Easter table. Enjoy!

Quick Strawberry Trifle

¼ Cup sugar, divided
2 pints fresh strawberries, stemmed and halved (or quartered if they are large)
4 ounces cream cheese, softened
2 cups whipping cream
1 store bought pound cake
Melted raspberry jelly, to taste

Fold 1/8 cup of the sugar into the prepared strawberries and set aside. Beat the remaining 1/8 cup sugar into the cream cheese. Whip the cream until stiff peaks form, then gently fold the cream cheese mixture into the cream. Cut the cake into ¼ inch slices. Later the slices in the bottom of your trifle dish flat and spread with melted jelly, then top with strawberries, then cream mixture. Continue to layer, ending with cream layer. Garnish with whole berries and mint, if desired.
