Years ago, a work friend and I were readying some food to take to a company party. My friend was preparing what she called “Unbelievable Peanut Butter Cookies”. These cookies were super easy to make and tasted so yummy!!
For the past 35 years, “Old Unbelievable” has been my favorite cookie to make and my “go to” dessert to take to a party. I have made some fun adaptions to the original recipe from time-to-time. Sometimes while still hot out of the oven, I top them with a Hershey’s Kiss. Peanut Butter AND chocolate! What could be tastier? Or how about putting one cookie in a bowl with a small scoop of vanilla ice cream and drizzle it with chocolate syrup? Are you seeing a theme here? Now that we have nut allergies in the family, I’ve substituted the peanut butter for SunButter. There are endless possibilities with this simple little recipe.
Unbelievable Peanut Butter Cookies
INGREDIENTS:
- 1 cup Peanut Butter or SunButter
- 1 cup Sugar
- 1 Egg
DIRECTIONS:
- Cream sugar and peanut butter (or SunButter).
- Add egg and mix until smooth.
- Shape into balls, about 1-1/2″ in diameter and place on an ungreased cookie sheet.
- Flatten balls by criss-crossing with a fork to about 1/3″ thickness.
- Bake at 325-degrees for 10-12 minutes or until lightly browned.
- Yields about 2-2-1/2 dozen cookies.

Yep! That’s it, Loretta. The recipe is so easy to memorize that it doesn’t matter where you are…access to a cookbook or not…you’ve always got a cookie recipe you can pull out of your hat.
