This week’s Tastes Like Vintage post is from the team members of the Vintage Etsy Society team


This is the time of year when the apples are ripe for the picking!

Here are some of our favorite apple recipes, passed down through the generations. Grab a vintage basket, head to the nearest apple farm and get ready for some delectable treats!

Old-Fashioned Apple Juice

INGREDIENTS:

  • 10 Apples (quartered)
  • 3/4 cup White Sugar
  • 1 tablespoon Ground Cinnamon
  • 1 tablespoon Ground Allspice
  • 1 T fresh chopped tarragon

DIRECTIONS:

  1. Place applies in a large stockpot and add water to cover the apples by at least 2 inches.
  2. Stir in sugar, cinnamon, and allspice.
  3. Bring to a boil.
  4. Boil uncovered for 1 hour, then reduce the heat, cover the pot, and simmer for 2 hours.
  5. Strain apple mixture through a fine mesh sieve (or cheesecloth).
  6. Discard the solids, or save them for another recipe.
  7. Drain cider again through a cheesecloth lined sieve to remove additional apple bits.
  8. Refrigerate until cold.
  9. Serve in vintage glasses.

Deep Dish Apple Rhubarb (or Sour Cherry) Pie

INGREDIENTS:

  • Pastry for a double crust pie (store bought or make your own)
  • 9 cups peeled, sliced tart apples (about 9 apples)
  • 4 cups fresh or frozen sliced rhubarb (or substitute 4 cups tart cherries)
  • 1 cup sugar
  • 1/3 cup all purpose flour
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1/3 cup orange or apple juice

DIRECTIONS:

  1. Preheat oven to 400°F.
  2. Prepare pastry for a double crust pie. Wrap and chill.
  3. Combine apples and rhubarb in a large bowl. Combine sugar, flour and spices in a small bowl. Add to fruit. Toss to coat. Place fruit in a 9” x 13” baking dish. Drizzle with juice.
  4. Roll out pastry on a lightly floured surface to a 10” x 14” rectangle. Trim to even edges. Place over fruit. Flute edges and cut slits for steam to escape.
  5. Bake at 400°F for 40 to 50 minutes or until fruit is tender and pastry is golden.
  6. Enjoy!

Makes a 9″ x 13″ pie for a crowd

Baked Apples

(Slight variation of a Paula Dean recipe)

INGREDIENTS:

  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup sugar
  • 6 Granny Smith apples (preferably the same size)
  • 2 tbsp butter, cut into 6 tsp-size pieces
  • 1 cup apple juice

DIRECTIONS:

  1. Preheat oven to 325 degrees.
  2. Combine cinnamon, nutmeg, and sugar in a small bowl. Mix well and set aside.
  3. Core apples.
    Caution: Do not puncture the bottom of the apples so that the juices remain.
  4. Remove the apple skin at the cored opening about ½ inch down from the top of the apple.
  5. Fill each cavity with the cinnamon-nutmeg-sugar mixture.
  6. Place a tsp-sized piece of butter on the top of each apple.
  7. Place apples in casserole dish and pour apple juice around them.
  8. Cover the pan with aluminum foil and bake approximately 45 minutes to 1 hour. Be careful not to overbake or apple skins will tear and apples will become too mushy. Remove from heat and serve.

Note: You could use less cinnamon than the recipe calls for if you aren’t a big fan of cinnamon. This recipe is yummy and smells so good while it is baking!!

Romaine with Gorgonzola, Apple and Toasted Pecans

INGREDIENTS:

  • Romaine Leaves
  • Gorgonzola Cheese (or Blue Cheese)
  • 1/2 cup Apples (firm fleshed, fresh sliced)
  • 1/4 cup diced Red Pepper
  • Balsamic Dressing
  • 2 tablespoons Toasted Pecans

DIRECTIONS:

  1. For each serving, layer a plate with torn romaine leaves.
  2. Add an ounce of a good blue cheese or gorgonzola, one half cup of firm fleshed, fresh sliced apples (I like Golden Crisp), and 1/4 cup diced red pepper.
  3. Drizzle with creamy Balsamic dressing and sprinkle with 2 tablespoons of toasted pecans.
