Corn Chowder
Growing up in NH with the cold northeastern winters, my mom used to make this dish which was not only economical but delicious! It reminds me of my childhood.
Ingredients:
- A couple strips of bacon
- 1 sliced onion
- 2½ cups diced potatoes
- 2 cups boiling water
- 1 cup cooked corn, canned or fresh
- 1 cup hot milk
- 1 cup light cream
- Salt and pepper
Directions:
Cook the bacon in the bottom of a large pot.
Add onion and cook to a golden brown.
Add potatoes, boiling water, corn and cook until potatoes are tender (or cook them separately, then add them). To this add milk, cream and seasonings.
Reheat and serve over crackers placed in each dish. Serves 4.

Oh my gosh! Corn Chowder is my daughter’s favorite! And , no I have never made it from scratch. I may have to give her this recipe though!
